Gluten-free Egg Yolk Cookies

Ingredients:

  • 3 cups gluten-free all-purpose flour
  • 5 tbsp purified butter or ghee
  • 5 egg yolks (4 for dough, 1 for brushing)
  • 1 tsp aluminum-free bio-carb soda
  • 3 tbsp natural sweetener Xylitol
  • 2 tsp vanilla extract
  • 2 pinches of Himalayan salt
  • 1 tube of icing color (optional)
  • Icing decoration items (optional)

Cooking:

  1. Melt butter on low heat, set aside.
  2. Whisk egg yolks, add salt, then incorporate butter, vanilla extract, and bio-carb soda gradually.
  3. Fold in flour with a spatula, then use hands to form a firm dough.
  4. Preheat oven to 175°C for 5 minutes.
  5. Divide dough, roll into balls.
  6. Flatten each ball between baking papers, cut with your preferred cookie cutter.
  7. Place on baking tray, brush egg yolk on each.
  8. Bake at 175°C for 6-7 minutes. Cool with oven door slightly open.
  9. Once cooled, spread icing and decorate to your liking.

Create 12-16 delightful cookies, varying in thickness and cutter size. Enjoy the joy in minutes!
